Beef Crostini

•    Mix mayonnaise, Dijon mustard, and prepared horseradish to taste, season with salt & pepper
•    Thinly Slice Peppered Beef Tenderloin from Perini Ranch
•    Shave Parmesan cheese
•    Preheat oven to 375 degrees
•    Cut Ciabatta bread into ¼ to ½ inch slices
•    Spray both sides of Ciabatta with olive oil and place on a baking pan
•    Bake Ciabatta for 14 minutes, turning slices over half-way through
•    When the crostinis come out of the oven, spread each slice with the horseradish sauce, layer the arugula, beef and Parmesan on top

Serve immediately (the crostinis will not keep)
